Wild boar

Slow cooked Alberta raised free range wild boar, pulled and folded into a rich fresh

tomato & roasted vegetable ragu, dressed over just cooked ribbons of Paparadella pasta,

served with fresh grated parmesan, cracked black pepper

Rack of Lamb -`` Deux``

A whole roasted rack of lamb, prepared in the classic French style, fine herbs, Dijon rub

buttered crumbs, mint jus, served for two medley of fresh

vegetable, roasted fingerling potatoes

Arctic Char

A dry –rubbed arctic char fillet, fire roasted drizzled with a fresh sage butter,

purple yam smashed, oyster mushroom


A twelve hour slow roasted Alberta beef brisket ,brined for maximum flavour,

and braised with peking style spices, with hints of citrus, served with

Yukon gold Asiago mashed, grilled bok choy
